Born from a wild grape variety, domesticated through the centuries, there is no dubt that Lambrusco wine richely deserve a special place on the national and international markets all over the world. Thanks to the hard work of numerous wine makers, this red sparkling wine gained in 1970 the DOC certification (Denomination of Controlled Origin), recently transformed into DOP certification (Protection of Denomination of Origin). Among the three DOP Lambrusco types, Lambrusco of Sorbara, Lambrusco Salamino Santa Croce and Lambrusco Grasparossa di Castelvetro, the last is the most persistent and full–bodied wine. With fine bubbles, it is a purple red wine, with violet shades and persistent foam. The flavor is pleasantly vinous and fruity, with a well balanced acidity and a lightly bitter finishing. The dry Lambrusco type perfectly matches with first courses as pasta with meat sauce, gratin pasta, meat roasts, cured meat, cheeses and in genral with the typical first courses of Emilian cuisine. The sweet Lambrusco type has an intense fruity aroma, fragrant and vinous, and matches with baked patisserie and the traditional desserts of Modena.
