Zampone di Modena IGP with mash potatoes and beans

Zampone is a typical sausage of Modena made with pork rind and chopped meat, salted and spiced inserted into the skin of the foreleg of the pig, which takes its shape. Zampone is a celebration of the best cuts of pork and it is a specialty, something to prepare on a rare occasion. It is usually reserved for the highest of Christmas holidays.
Since 1989, the city of Castelnuovo Rangone hosts a festival where a giant zampone sausage is created, weighing in at more than two thousand pounds, which sets the new world record for the "Largest Zampone sausage".

  • Parmigiano Reggiano DOP
  • garlic and onion
  • tomatoes
  • butter
  • salt and pepper

During the cooking of the Zampone (following the instructions on the package), heat the beans in a pan adding garlic, onion, tomatoes, salt and pepper as desired. Flavour the mash potatoes with grated Parmigiano Reggiano DOP. At the end, place the Zampone di Modena on a serving dish, adding the side made of beans and mash potatoes.
