Cotechino di Modena IGP with lentils
Cotechino is a typical Emilian product which a fresh sausage made from pork, fatback, and pork rind, plus salt, saltpeter, pepper, nutmeg and herbs. Cotechino is often served with lentils or cannellini beans and with a sauce alongside mashed potatoes, especially around the New Year. On the market, precooked cotechino are available, easy to prepare and the packages are supplied with cooking instructions.
COOKING OF NOT PRECOOKED COTECHINO
Cotechino must be pierced with a fork in different points and wrapped in a white thin cloth, the end of which must be tied with strings. Immerse it in a pan with the necessary water in order it to be completely covered and, when the water has boiled, lower the heat and let it cook slowly for at least an hour and a half. Once it is cooked, let it rest for a few minutes in its own water. Then discard the cooking broth and remove the cotechino from its casing. Cut it into slices and place them on a serving dish with the desired sides: the most used ones are lentils.
