Bensone is the oldest and simplest dessert of Modena with the classic shape of donut or panettone. The recipe remained unchanged over time, but traditionally it is prepared in two different typologies: without filling or stuffed with jams.


  • 500 gr all-purpose flour
  • 150 gr granulated sugar
  • 100 gr soft butter
  • 50 gr milk room temperatur
  • 2 eggs
  • 1 sachet of instant yeast
  • 1 lemon zest grated

Mix the flour with sugar, the grated zest of a lemon and the yeast. Add the eggs and the butter, start mixing everything together and then add the milk. After making the dough, roll it with the hands and in a baking tray lined with oven paper, lay out the dough in the shape that prefer. Now brush the cake with the egg and bake in preheated oven at 180°C for about 35 minutes.
