Parmigiano Reggiano DOP cheese
is strictly in relation with its area of origin. It is in the areas of Parma, Reggio Emilia,
Modena, Bologna on the left side of Reno river and in that of Mantova on the right
side of Po river, that every process of production or collection of the raw material is
done, from the raw milk to the final product. Thanks to the use of natural forage,
fresh raw milk, without any other additions, the Parmigiano Reggiano originates.
During its long ageing – minimun 12 months up to more than 30 months –the lactic
bacteria give to this cheese its typical taste and texture. Parmigiano Reggiano is
definitely rich in nutritive values and easily digestible. It is especially recommended
for elderly and children and it is suitable for people who have lactose intolerance, for
whom it is suggested the one with a more than 24 months of ageing.
Parmigiano Reggiano is a DOP product (Protected Denomination of Origin) since 1996. The DOP designation establishes strict rules of production, collected in an Disciplinary, which fixes a minimum period of 12 months of ageing. Only after a quality check and a accurate exam, the cheeses can be marked with the Parmigiano Reggiano DOP stamp. Parmigiano Reggiano is perfect to be grated on pasta, used as ingredient in pesto sauce or eaten as appetizers during happy hours or meals.
