Traditional Balsamic Vinegar of Modena DOP

Traditional Balsamic Vinegar of Modena DOP is a delicacy made of cooked grape must from local grape varieties cultivated in the area of Modena. It is a traditional product, amply widespread both in Modenesi families and on the international markets. It gained the DOP certification (Protection of Denomination of Origin) in 1986. The ageing of the product is done in batterie, a sequence of barrels made of different wood and size, thanks to colonies of vinegar bacteria, called "Madri" (Mothers). The Traditional Balsamic Vinegar has a dark brown colour, with an intense aroma and a sweet taste, well balanced by a pleasant acidity. The thickness of the product increases with the ageing: it has to age minimum 12 years for the "Affinato" and minimum 25 years for the "Extravecchio" tipology. It can be tasted alone at the end of meal or used in drops on Parmigiano Reggiano DOP, strawberries, ice cream or risotto.
