Balsamic Vinegar of Modena IGP
Balsamic Vinegar of Modena IGP is a traditional product made of cooked grape must from local grape varieties such as Lambrusco, Trebbiano, Sangiovese, Albana, Ancellotta, Fortana, Montuni, with the addition of wine vinegar. The disciplinary of production allowes to add caramel to intesify the colour. The product is aged in barrels made of different wood – oak, chestnut, mulberry, juniper – and size. In 2009, Balsamic Vinegar fo Modena obtained the IGP certification (Protection of Geographical Indication). As the others DOP and IGP products, the production of the Balsamic Vinegar of Modena is checked by the Italian Ministry of Agriculture Policy.
